The Grilled Cheese

Ingredients
Sandwich

| 2 Slices | Sourdough Bread ↳ Homemade is best. |
| 2 Slices | Gruyère Cheese |
| 1 Slice | American Swiss |
| 2 Tbsp | Mayonnaise ↳ Don't Cheap out. I love homemade if available. |
| 1/4 Tsp | Salt |
| 1/4 Tsp | Pepper |
Optional Add-Ons

| 1/2 Tsp | Crushed Garlic |

Instructions
Sandwich

Preheat Pan to Medium heat
- 2
Lather one side of each bread slice with Mayonnaise.
- 3
Put a tiny bit of Mayonnaise on the inside portion of each slice. Go light. Season with Salt and Pepper
- If I'm feeling spicy, I might trade mayo with a softened mixture of butter, garlic, parsley.

On the bottom slice add one slice of Gruyère, one slice of swiss.

On the top slice, add one slice of Gruyère

Put bottom slice onto hot pan, immediately top with other slice of bread.

Flip when bottom side has formed a nice brown crust
- I like to just flip once, so I look for a Medium browning on the bottom side before flipping

Wait until other side has developed a similar crust and cheese has melted. Remove from pan.
Optional Add-ons

Ham: Throw a slice onto the hot pan. Cook on each side until warm / browned a bit.

Combine softened butter, garlic, and parsley in a small bowl. Make this right before spreading.
